Gilmore & Damian D’Silva is a tribute to the legacy of Chef Damian’s grandfather, Gilmore D’Silva, and the impact it had on the chef’s life. Chef Damian presents the soulful heritage flavours he is renowned for, in a menu of predominantly heirloom Eurasian recipes — some dating back more than 200 years, while the rest are Chinese dishes inspired by his Grandad’s home cooking.
